(Again, sorry for the upside down instructions...So like me to mix it up a bit.....)
4. Add the cubed cheese to the milk mixture and stir until creamy...Add 1/2 Parmesan/Roman0 Cheese...
3. Then the flour arrives. About 1/2 cup. A rue forms. Stir till it's all clumpy; careful! Don't burn it! Then ever so slowly, add about 1 cup of milk, stirring all the while till it is starting to thicken...Perhaps now would be a good time to add 2 tsps kosher salt, 1/2 ground pepper, 1 tbs parsley, 1 tsp celery seed...(you could use chopped fresh celery; I just forgot)

Homemade Macaroni Cheese! Yes, Hubby bought his weight in cheese awhile back (Eldest/Admin did this not too long ago; Some genetic propensity for Cheese Abundance?), while it was on sale. A good start...Abundant Cheese.....Chopped Onion, pepper, mushrooms...Just enough to saute in BUTTER....
